A fresh tin of first-harvest Uji ceremonial matcha is a vibrant, electric miracle. Yet leave that same tin unsealed on a sunlit London kitchen counter for two weeks, and you will return to find a dull, brownish-yellow powder smelling of dried straw and tasting of harsh astringency.
The Four Enemies of Fresh Matcha
1. Atmospheric Oxygen (Oxidation)
Because Tencha is milled to an ultra-fine particle size of 5 to 10 microns, its specific surface area is immense. Direct contact with air causes immediate photo-oxidation of delicate volatile aromatics and converts sweet L-theanine into bitter tannins.
2. UV & Ambient Light (Chlorophyll Photolysis)
Chlorophyll is photosensitive. Exposure to sunlight or fluorescent light cleaves the magnesium ion from the porphyrin ring of the chlorophyll molecule, turning the vivid green hue into dull olive pheophytin.
3. Thermal Energy (Heat)
At temperatures above 20°C, enzymatic degradation accelerates exponentially. Volatile grassy esters evaporate, leaving behind a flat, lifeless profile.
4. Humidity & Moisture (Clumping & Mold)
Dried matcha has an ultra-low moisture content (under 3%). It acts as a powerful desiccant, sucking moisture and kitchen odors (garlic, spices) directly out of the ambient air.
The Golden Storage Rules
- Unopened Tins: Keep sealed in the freezer (-18°C) or refrigerator (4°C). They will remain pristine for up to 12 months.
- The 15-Minute Acclimation Rule: Never open a cold tin straight from the fridge! Condensation will form on the frozen powder inside, ruining the whole batch. Allow the sealed tin to reach room temperature for 15 minutes before unsealing.
- Once Opened: Store in the refrigerator in an airtight opaque container. Consume within 4 to 6 weeks for peak competition-grade umami.
