Traditional Ceremonial Usucha (Thin Tea)

- Warm the Chawan by pouring 100ml warm water into the bowl; dip the bamboo chasen tines for 20 seconds to soften them; discard water and wipe thoroughly dry.
- Sift exactly 2.0g of matcha powder into the warmed bowl to eradicate electrostatic clumps.
- Pour 70ml of filtered 78°C water gently around the inner perimeter of the bowl.
- Hold the chasen lightly with relaxed fingers and whisk briskly from the wrist in a rapid zig-zag "W" motion for 25 seconds, keeping the tips just above the ceramic floor.
- Slow down your whisking pace and draw an "O" shape across the surface to burst large bubbles, leaving an unbroken, glossy emerald crema. Savor immediately.
Imperial Ceremonial Koicha (Thick Tea)
The sacred, syrupy ceremonial ritual reserved for elite formal tea gatherings.

- Soft filtered water at 70°C–75°C 35 ml

- Preheat the chawan with hot water and dry completely. Sift 4.0 grams (4 scoops) of premium ceremonial matcha into the bowl.
- Add only 20ml of 72°C water initially.
- Do NOT whisk rapidly into froth! Using gentle, deliberate circular kneading motions, gently press and fold the powder into the water.
- Add the remaining 15ml of warm water and knead until the liquor takes on the consistency and sheen of melted dark chocolate.
- Serve without foam. The taste is remarkably rich, sweet, and pure umami.
The London Iced Oat Matcha Latte

- Sift 2.5g ceremonial matcha into a small preparation bowl.
- Add 35ml of 75°C water and whisk vigorously for 20 seconds into a rich, clump-free espresso-style green concentrate.
- In a tall ribbed glass tumbler, add 5 large ice cubes, sweetening syrup, and pour 180ml chilled oat milk.
- Gently float the warm emerald matcha concentrate directly over the top ice cube. The natural density differential creates an immaculate two-tone layered presentation.
- Serve with a bamboo or glass straw. Stir before drinking.
Ceremonial Sparkling Yuzu Matcha Tonic
An effervescent, citrus-infused botanical refresher created for warm London summer afternoons.
- Ceremonial Grade Matcha 2 g
- Cold filtered water 30 ml
- Pure Japanese Yuzu juice (unpasteurized) 15 ml
- Premium Indian or Mediterranean tonic water 160 ml

- Cold-whisk 2.0g matcha with 30ml cold water in a chawan or shaker until completely dissolved.
- Fill a Collins glass with ice cubes and stir in 15ml fresh yuzu juice.
- Slowly pour 160ml chilled tonic water down the side of the glass to maintain carbonation.
- Crown the drink with the cold-whisked jade matcha shot.
- Garnish with fresh lemon thyme. The bright acidity of yuzu and gentle quinine bitterness elevate matcha's vegetal umami.
London Artisan Matcha Basque Cheesecake
Creamy caramelized exterior with an oozy, molten ceremonial green tea center.
- High-grade Culinary or Daily Ceremonial Matcha 18 g
- Philadelphia cream cheese (at room temperature) 500 g
- Caster sugar 140 g
- organic eggs (room temp) 4 Large
- Double cream (36% fat) 250 ml
- All-purpose flour (sifted) 15 g
- Pure vanilla extract 1 tsp
- Preheat oven to 220°C (200°C fan). Line an 8-inch round cake tin with two sheets of crumpled, dampened parchment paper.
- Beat cream cheese and sugar in a large bowl on medium speed until smooth and glossy.
- Add eggs one at a time, incorporating fully before adding the next.
- Whisk the sifted matcha powder into the double cream until completely dissolved into an emerald cream; pour into batter.
- Fold in the sifted flour and vanilla gently.
- Pour batter into prepared tin and bake for 30–35 minutes until the top is deeply caramelized (almost charred) and the center remains delightfully jiggly.
- Cool at room temperature for 3 hours, then chill overnight. Slice with a warmed chef's knife.
Overnight Matcha Chia Wellness Pudding
