Phase I • Thermal Conditioning

Preheat the Chawan & Condition the Chasen

Pour 100ml of hot water into your ceramic bowl (Chawan) and gently swirl it. Rest the tines of your bamboo whisk (Chasen) in the warm water for 30 seconds. This relaxes the fine bamboo fibers, preventing them from snapping during vigorous whisking. Empty the water and wipe the bowl completely dry with a clean cloth (Chakin).

✓ Golden Rule: Never whisk in a cold or wet bowl. Residual moisture clumps dry powder before water is added.

Phase II • Micro-Aeration

The Critical Sifting Step (Furui)

Stone-ground ceremonial matcha is milled down to 5 to 10 microns (finer than baby powder). Due to electrostatic charges, particles cling together into small clusters. Using a fine stainless mesh sifter (Furui), sift exactly 2.0 grams (approx. 2 heaping bamboo chashaku scoops) directly into the warmed bowl. Sifted matcha dissolves instantaneously without leaving bitter paste at the bottom.

Phase III • Thermal Precision

Water Temperature & Initial Slurry

Heat low-mineral filtered water to strictly 75°C to 80°C (never 100°C boiling water!). Pour approximately 70ml of water slowly around the rim of the bowl to avoid scattering the delicate powder.

⚠️ Thermal Warning: Water above 80°C scorches amino acids (L-Theanine) and generates harsh, permanent bitterness.

Phase IV • Kinetic Suspension

The Dynamic 'W' Motion & Crema Finish

Keep the chasen tines suspended 2mm above the bottom of the bowl—do not scrape the ceramic. Whisk briskly using only your wrist in a rapid zig-zag "W" or "M" motion for 25 to 30 seconds. Do not stir in circles! Once an abundant jade froth forms, slow down your speed and draw a gentle "O" shape across the surface to break oversized surface bubbles, leaving an unbroken, glossy micro-foam.
